Polysaccharide chức năng của vi sinh vật đã được sử dụng trong
nhiều năm như một phần chế độ ăn uống của con người và đóng vai trò như một nguồn
dược liệu. Ví dụ, ở vùng Đông Á, các chiết xuất tan trong nước nóng của nấm (chủ
yếu là polysaccharide) đã được sử dụng hàng trăm năm cho mục đích y tế. Các
phương thức y học đông y này đã mở đường cho các nghiên cứu khoa học hiện đại về
các polysaccharide vi sinh vật y học. Ngày nay được biết rằng nhiều loại nấm,
bao gồm nấm thông thường, cũng như nấm men, vi khuẩn axit lactic, và các vi khuẩn
khác, tiết các polysaccharide ngoại bào (extracellular
polysaccharide) như là một phần trong quá trình trao đổi chất của chúng,
hoặc các polysaccharide thành tế bào của chúng, có biểu hiện kháng thể, kích
thích miễn dịch (immunostimulatory), Hạ huyết áp, hạ đường huyết, và các ảnh hưởng
khác có lợi cho sức khoẻ con người. Khi có đáp ứng miễn dịch, hoạt động bảo vệ
của chúng thường được trung gian bằng sự kích thích của hệ thống miễn dịch thay
vì tương tác trực tiếp với tác nhân gây bệnh; Do đó, chúng còn được gọi là các
chất điều chỉnh đáp ứng sinh học - (biological
response modifiers - BRMs).
